I got a bit busy and now have a bit of a backlog of things to post. This recipe is pretty easy and it’s quite juicy and tasty. These can work as the main meal in bento too. This recipe goes well with rice or bread.
I made way too many of these and we were got to eat them over the weekend. Recipe under the cut.
Ingredients: (Serves 2-3 for dinner)
3 boneless chicken thighs
A little bit of black pepper
Vegetable oil as needed
6 tablespoons of ponzu
4 tablespoons of ketchup
Note: If cooking just one thigh, use 2 tablespoons of ponzu and 1 tablespoon and 1 teaspoon of ketchup.
1. Cut the thighs into bite-sized chunks. Sprinkle pepper over them.
2. Heat up the vegetable oil in a frying pan and cook the meat.
3. When they start to turn golden, put the lid on the pot and let it back on low-medium heat so that it gets thoroughly cooked.
4. When the chicken is done cooking, turn off the heat. Add the sauce and turn the heat back on. Mix it with the chicken.
My notes: I’ve found that it tastes best if I let the chicken simmer in the sauce for several minutes rather than just mix them together for a couple of minutes.
